Nestled along a cobblestone street in the heart of San Miguel de Allende’s historic Centro neighborhood, La Casa Dragones stands out with its vibrant blue double doors. By using one of the unique horse-shaped door knockers, visitors are welcomed into what many consider to be Mexico’s premier cocktail bar. Recently, the esteemed tequila producer Casa Dragones undertook an extensive renovation to transform this historic property into a luxurious tasting venue.
A Rich Historical Legacy
Before it became a destination for high-end spirit enthusiasts, this site served as a stable for the renowned Dragones cavalry—an influential force during Mexico’s independence movement that began in 1810. The establishment pays homage to this legacy through its design; Mexican architect Marco Martinez Valle and New York-based studio Meyer Davis preserved original stone walls and wooden doors during their redesign efforts.
The interiors are further enhanced by contributions from local artists like Héctor Esrawe, who designed an impressive light fixture that adorns the building’s three-story staircase. However, the true centerpiece is undoubtedly the bar itself, featuring stunning tiles crafted from black volcanic glass sourced directly from agave fields located in Jalisco.
Commitment to Quality and Heritage
This dedication to utilizing Mexican materials reflects the vision of Bertha González Nieves, co-founder and CEO of Casa Dragones. Since launching with MTV founder Bob Pittman in 2009—when she also made history as the first female Maestra Tequilera—González Nieves has been passionate about showcasing Mexico’s finest offerings globally. “I aspire for my legacy to embody Mexico’s best,” she expresses.
A Journey into Tequila Craftsmanship
Her journey into tequila production was sparked by her participation in an international youth exchange program sponsored by Japan. This experience allowed her to explore various aspects of Mexican culture—including agave cultivation—which ultimately inspired her career path.
Casa Dragones prides itself on producing limited batches—no more than 500 cases at once—with each batch meticulously crafted from hand-selected blue agave plants. “Our appellation is not only one of the oldest but also among the most respected worldwide,” González Nieves notes proudly.
The Artistry Behind Each Bottle
An artisan technique known as pepita or “little seed” is employed where skilled craftsmen etch images of agave plants onto each handcrafted bottle using traditional grinding stones or wheels.
An Unforgettable Tasting Experience
Tastings at La Casa take place at an intimate 12-seat bar where guests can savor four distinct sipping tequilas paired with gourmet small plates such as mushroom tostadas topped with avocado mousse and serrano peppers. Additionally, private dinners and cocktail receptions can be arranged upon request (currently available for overnight stays by invitation only).
A Unique Offering: Reposado Mizunara
A standout addition to their lineup is Casa Dragones Reposado Mizunara—the world’s first tequila aged in Mizunara oak casks traditionally used for Japanese whiskies. “I enjoy it best over a single ice cube,” González Nieves shares enthusiastically, “as it allows delicate notes of apricot and cacao to unfold beautifully.”
